We just spent a couple of days in Solvang, a charming, Danish-like town. You would think it might be difficult to find a gluten free breakfast amid the Danish Aebleskiver and pastry shops. Not true.
We stumbled upon The Mustard Seed Restaurant. The owner of the restaurant waited on us and he was delightful. I asked him if he had gluten free bread, and he asked me, “Gluten Allergy?”. When I said yes, he apologized and said he didn’t have gluten free bread. But he offered to make me gf pancakes. Since they weren’t part of the menu, and it sounded like he would have to go through extra work to make the pancakes, I politely told him it wasn’t necessary to go through the extra effort, and I ordered an omelet.
At some point during our meal, the owner came to our table with a plate of gluten free pancakes that he made for us at no charge. He explained how he made them which entailed processing corn flakes in a food processor, adding eggs, milk, some baking soda and brown sugar. They were delicious, light and fluffy!! Since I had already eaten half of my omelet, I shared the pancakes with the rest of my gluten eating friends, and they loved them!
While we were still eating, I overheard this gentleman responding to someone at another table who asked about gluten free menu items. He told her that all the sauces that he makes have corn starch as opposed to flour so they are gluten free.
So if you happen to be in Solvang any time soon, I’d recommend trying The Mustard Seed Restaurant. And if you happen to be there for breakfast, ask about the gf pancakes. You won’t be disappointed!
